This classic Greek salad relies heavily on the ripest and most aromatic tomatoes.
SERVES: 6
PREP TIME: 15 Minutes
COOK TIME: Minutes
Ingredients

6 large, ripe tomatoes
2 cucumbers, peeled, halved lengthwise, seeded, cut into 1-inch thick slices
1 large red bell pepper, seeded, but lengthwise into narrow strips, and each strip cut in half crosswise
1/4 lb. Kalamata olives (about 20) pitted
1/2 large red onion, very thinly sliced
1/2 lb. feta cheese, crumbled
1/3 cup extra-virgin olive oil
1 tsp. dried oregano
Freshly cracked black pepper to taste
1/4 cup chopped fresh Italian parsley (optional)

Directions
Step 1  Step 1:
In a large bowl, combine the tomatoes, cucumbers, red pepper, olives, most of the sliced onion, and most of the Feta.
 
Step 2  Step 2:
Drizzle with the olive oil, and sprinkle with the oregano and cracked pepper. Toss gently.
 
Step 3  Step 3:
Scatter the remaining feta and onion over the top. Grind a little more pepper over the top, then sprinkle on the parsley, if using. Do not make this salad too far in advance as it gets watery. If that should happen, drain off the excess liquid and add a little more oil.
